Angeles Ayala was born in Mexico City where she
developed a
passion for cooking. She trained as a
professional chef at the Universidad Anahuac in Mexico
City, the Culinary Institute of America in New York and
at the Leith’s School of Food and Wine in London,
where she lives.
Angeles has participated during recent years in a number of international fairs promoting Mexican Cuisine.
She now devotes her time to being a culinary consultant and teacher, recipe and cook book writer and overall food enthusiast, dedicated to discovering the great variety and delights of the world's cuisines.
She is co-author of Fresh Mexican a cook book published by Hamlyn in the United Kingdom and Barnes & Noble in the United States.

Among her most challenging and innovative projects is her work as
a consultant for Mission Foods,
creating the new recipes and presentation techniques for the
Mission Deli Wraps.
She currently works as a consultant
for Chilango a “fast-casual” restaurant in London with a unique blend of modern Mexican cuisine
and local tastes.
